  10. Cami Bowman (Doug's Cousin) 8am, June 2

Hi Cam! I am the Queen of Bisquick-it is one of those gifts to busy moms! Here is one of our EASY favorites: Ranch Chicken.

    3/4 cup bisquick
    3/4 cup ranch
    pepper to taste
    4 boneless chicken breasts

Pour ranch in pie dish-coat chicken well. In another pie dish combine bisquick and pepper (sometimes I add bacon crumbles)-press chicken into bisquick so that coating sticks. Place in greased baking dish and drizzle with melted butter..

Bake at 425 for about 30-35 minutes.

This also works really well with cubed steaks.

Here’s a quick & easy Bisquick recipe that makes a great Coffee Cake:

Bisquick Coffee Cake, Betty Crocker. Heat oven to 375°F.

    The Ingredients are:
    Cinnamon Streusel
    2 cups Original Bisquick® mix
    2/3 cup milk or water
    2 tablespoons sugar
    1 egg

Heat oven to 375°F. Grease 9-inch round pan. Make Cinnamon Streusel, reserve. Stir remaining ingredients until blended. Mix in a 1/4 of the Streusel topping, spread in pan.Cover with Cinnamon Streusel. Bake 18 to 22 minutes or until golden brown, testing with a toothpick.

    Cinnamon Streusel Topping
    2/3 cup Original Bisquick® mix
    2/3 cup packed brown sugar
    1 teaspoon ground cinnamon
4 tablespoons butter or margarine (firm)

Mix all ingredients in small bowl until crumbly.
Cutting them with a knife and fork helps separate the butter.

  19. Anne 10am, June 4

Bisquick makes the best pancakes imho and so simple that your kids (or spouse) can even help out! The basic pancake recipe uses 2 cups of Bisquick mix, 2 eggs (beaten), and 1 cup of milk. Simply beat all the ingredients together until well blended and then pour approximately ¼ cup portions onto a sizzling hot greased or nonstick griddle. Cook until the edges begin to dry and they are golden brown on the bottom, then flip and continue cooking until that side is golden brown, as well. Serve hot with butter and syrup and watch them disappear. You can also serve them with jam or fresh fruit.

I also love to add blueberries into the mix (add about 1 cup), chocolate chips, walnuts, cranberries, or bananas. You can really add just about anything you might like in a pancake. Banana Walnut pancakes are a favorite at our house.

I use Bisquick to make chicken n’ dumplings. Just use the recipe for biscuits, and add the batter/dough to the steaming hot (boiling) chicken broth. You can make the dumplings as big or as little as you want… depending on how large of a “ball” of dough you put in the pot. :)

    Pumpkin Pancakes

    Pancakes
    2 1/3 cups Bisquick
    2 1/2 tablespoons white sugar
    1/3 teaspoon ground cinnamon
    1/3 teaspoon ground nutmeg
    1/4 teaspoon ground ginger
    2 eggs
    1 1/4 cups milk
    1/3 cup canned pumpkin
    1/4 cup vegetable oil

    Nutmeg whipped cream
    1 cup whipping cream
    2 tablespoons white sugar
    3/4 teaspoon vanilla extract
    1/2 teaspoon ground nutmeg

1.Whisk together the pancake mix, white sugar, cinnamon, the 1/3 teaspoon nutmeg, and ginger; set aside. Beat together the eggs, milk, pumpkin, and vegetable oil. Combine the two mixtures, stirring just until all ingredients are moistened.

2.Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Bubbles will start to form in the pancakes. Cook until the edges of the pancakes start to look dry, and a bubble popped near the edge holds its shape. Flip the pancakes over, and continue cooking until the other side is golden brown. Repeat with remaining batter, adding more oil to the griddle if necessary. Stack the pancakes on a plate and keep warm until serving. For larger batches, keep pancakes warm in a single layer on a cooling rack positioned over a baking sheet in a 300 degrees F oven (150 degrees C).

3.Place whipping cream in a small, deep, chilled bowl. Add the 2 tablespoons sugar, vanilla, and nutmeg; beat using a mixer with chilled beaters on medium-high speed until soft peaks form.

    Cinnamon Biscuits

    1 1/4 cups Reduced Fat Bisquick®
1 cup whole wheat baking mix
    2/3 cup buttermilk
    2 cups HERSHEY®’S Cinnamon Chips
    1 cup cinnamon coated raisins
    3 tablespoons melted butter
    1/2 cup confectioners’ sugar
    1 tablespoon melted butter
    1 tablespoon water

    1.Preheat oven to 425 degrees F (220 degrees C).

2.In a food processor, process cinnamon chips until coarsely ground. Remove 1/2 of the chips, and continue to process the remaining chips until finely ground.

3.In a large bowl, whisk together baking mixes, 1 cup coarsely ground cinnamon chips, and raisins. Make a well in center, add buttermilk, and stir just until dough comes together.

4.Turn dough out onto a lightly floured, flat surface. Knead gently for 1 minute. Flatten dough to a 8×10 inch rectangle. Brush with melted butter, and sprinkle with finely ground cinnamon chips. Starting from one long side, roll up the dough. Pinch seams and ends to seal. Slice roll crosswise into 8 equal slices, and arrange in a 9×13 ungreased baking pan.

5.Bake 12 minutes, until lightly golden. In a separate bowl, stir confectioners’ sugar, 1 tablespoon melted butter, and water until smooth. Drizzle glaze over hot biscuits.
