What’s for dinner? 3/24/2011

Here is what’s for dinner this week. I love St. Patrick’s Day! It’s the one time each year I fix Corned Beef and Cabbage!!

Monday: BBQ Meatballs, rice, broccoli
Tuesday: Mexican stuffed bell peppers, spanish rice, salad
Wednesday: Parmesan crusted chicken, roasted potatoes, broccoli
Thursday: Corned beef, cabbage, potatoes, carrots, corn bread
Friday: Pizza night!

What’s for dinner? 2/22/2011

You know how I tell you if I don’t plan out my meals I’m basically lost? Well, that’s me this week. I took the weekend off and didn’t plan out my shopping or my meals so this week is a scramble! However, it’s never too late to plan out the rest of the week.

This is kind of a strange week for us. Not only is it Valentine’s Day but my husband is in New Zealand for work. Poor guy! This week I’m going to try to keep it as easy as possible!

We’ve got a ton of food stockpiled that I think we need to use up. This week is going to be an “eat from the pantry” week. Ironically, I’ll be doing very little cooking this week since I have so many meals pre-made in the freezer!
